Your Everyday Salad by WeekNite Bite
All of you "salads are boring" ladies out there, we're talkin' to you! We're pretty confident that if anyone can change your mind, it's our gal Lindsay aka @weeknitebite and her Everyday Salad recipe. Taste for yourself, but this salad has it all: color, texture, flavor & SO. MUCH. CRUNCH! Whip it up in minutes & enjoy.
1 head of romaine, chopped
6 leaves of Tuscan or lacinato kale, stems removed and leaves chopped
1 apple, chopped
1 cup cherry tomatoes, halved
4 celery stalks, chopped
1/3 cup shredded carrots
1/4 cup pistachios
1 avocado, cubed
2 Persian cucumbers, chopped
A generous drizzle of extra virgin olive oil
Juice from 1/2 lemon
Salt & pepper to taste
- Place all salad ingredients into a large bowl. (tip: I prefer a large but shallow bowl so all of the ingredients don't get lost at the bottom)
- Drizzle the salad with olive oil, a squeeze of lemon, and season with salt and pepper.
- Toss salad well and taste and adjust seasoning as necessary. Enjoy!
