Not-Your-Average Avo Toast

Here's what you'll need:

  • 1-2 slices of sourdough toast
  • ½ an avocado
  • Thinly sliced cucumber
  • Pinch of salt & pepper
  • Drizzle with olive oil
  • Top with hemp seeds or chia seeds
  • Optional: Chili flakes to add some spice

Fiber-fueled Papaya Boat

Here's what you'll need:

  • ½-1 ripe papaya
  • 1 cup unsweetened almond milk
  • ¼ cup chia seeds
  • 1 tbsp agave nectar
  • Your choice of fruit (choose from berries, banana or make it tropical with mango or pineapple)
  • 1 tbsp hemp seeds
  • 1 tbsp unsweetened coconut shreds
  • 1 tbsp of nut butter (optional)

Instructions:

Mix almond milk, chia seeds & agave into bowl and let sit overnight. The next morning, scoop out the seeds of the papaya & fill with the chia pudding from the night before. Top with your fruit of choice, hemp seeds, & coconut shreds.

Choco-chia Overnight Oats

Here's what you'll need:

  • 1 cup rolled whole grain oats
  • 3 tbsp cocoa powder
  • 1 tbsp chia seeds
  • Pinch of salt
  • ¼ cup greek yogurt
  • 1 cup unsweetened almond milk
  • 1-2 tbsp maple syrup (preference for sweet level)
  • 1 tsp vanilla extract

Instructions:

Mix all ingredients into a bowl or mason jar and store overnight.
